On a side note, I put two pork butts on my Big Green Egg last night at 10:45PM. Kept the fire at 233F and they are only up to 187F as of 1:55PM. I take them off at 195F and let them rest until they get up to 205F. Pulled pork with apple wood smoke, baby! Smelling incredible. =D>
