This video of from Brazil so it's in Portuguese. The light source at night is supposedly attracting bugs and so the fish go in a frenzy trying to eat the bugs so they are literally flying into the boat.

If that is the case, they are not jumping to eat. The Asian Carp jumps when it gets scared or excited by boats or splashing or something. Which is what I think is going on here and why you hear them yelling hitting the boat making noise.
